250g Butter set at room temperature
2 cups Peanut butter (crunchy or smooth)
2 cups Brown Sugar
2 Eggs
3 1/2 cups Plain flour
1 tsp Baking powder
100g Dried strawberries (chopped)
100g Raw cashews (chopped)
Strawberry jam
Method:
Preheat oven to 180c
In a large mixing bowl combine Peanut butter and butter and beat until smooth.
Beat in sugar until mix becomes light and fluffy, add eggs and continue beating.
Sift in flour and baking powder then combine.
Chop dried strawberries and cashews and add into cookie mix.
Spoon mixture into hands and make into ball shapes, as big or as little as you desire.
Place balls onto a lined oven tray. Press cookies down with fork, then spoon small amounts of jam over the top of each cookie.
Place in oven and bake for approximately 15 - 20 minutes or until golden brown.
Cool on a wire rack, then enjoy.
